Unlike others in this thread, I'm not here to troll you, OP.
Might not quite be what you're after, but may be in some way useful. "There's an app for that!" (lulz) on the iPhone store. Well, not specifically for this, but if you take all communications abilities away from the iPhone, save bluetooth or wired for speakers, it could work.
Don't remember the cost, but a few years ago I got an app called "Noisli". Personally, since I work at night, I use it with a bluetooth speaker during the day to attempt to "cancel out" noise from the streets outside my window. Since sound is kinetic energy, I place the speaker against my bedroom window glass and crank it as high as I can personally stand it, then turn on the app and blast static noise at that window. Really helps a lot to negate the sound of, for example, construction (hammers swinging, etc.) happening across the street.
Not perfect, but could be part of a mix. If you're trying to avoid audio surveillance from what you suspect to be microphones hidden nearby, I wouldn't suggest any repeated audio sound with a known pattern, since the pattern, once established, could theoretically be isolated from other sounds in the area - like you and somebody talking. If at all possible, write it on a piece of paper, have the other party commit it to memory, then burn the paper.

Anyways, i'm researching your ideas does anyone have any further info or perhaps some links to information. Particularly with monitoring police activity and detection devices (which ones are good)

Any information to a setup needs to be tailored to what the person needs that equipment for apart from obviously your standard bug sweepers which will work. All they do is detect electronic frequency's from recording devices.
