What will happen if out of town when mail comes?

I'm leaving my state in a few days and am calling to cancel the delivery of my mail for the time I'm gone. This leave was unexpected, and I ordered a few days ago, (should ship today.) I ordered over the weekend but the vendor only ships during the week (and Monday was Columbus day.) What will happen if it doesn't arrive before Saturday? (I leave Sunday.)

If your placing a hold on your mail, they'll hold it at the post office for you until you come back.

In the US? I assume you mean you are setting up "Hold Mail" (which btw u can do online, no need to call)...what happens is they dont deliver mail to your house until the hold expires, then they deliver all the mail at once. My postman is either lazy or dumb, often he wont deliver the mail for a day or two AFTER the hold expires.
