Signing GPG (GPGTools)

When encrypting is it necessary to add my key to the recipients? And what is the difference if I do?

Only encrypt, don't sign+encrypt.

The recipient does not need your public key to decrypt, but if he wants to message you back.

I've often wondered if signing a GPG message makes plausible deniaability all the more difficult, since the signer had to know the passphrase.
