I've used circle, but when I go back to my hometown I don't live too far from a big city. From there, I use localbitcoins and just meet them in a chipotle or something and hand them cash for the bitcoin. LibertyX is pretty good I've heard, but some people have been reporting that they have had problems with the QPin system or whatever to get the bitcoin.
Your best bet for offering little to no information is localbitcoins.

I must have said this a million times by now, but LBC cash by mail. people write that off, I don't know why. it is the single most anonymous way of procuring BTC, hands down. I'ma break it down for you cause I am real spun....
so you could buy from Coinbase with your credit card (around 3% commission I believe, never used it personally though), and then tumble for another 1-3% fee on whatever you buy. hopefully using another intermediate wallet between you and DNM, so that's another fee. this method might look safe on paper...but take a step back. you're buying something with your credit card (which for all intents and purposes, is pretty much a government issued ID), tumbling it (which frankly, Idont know why you'd do UNLESS you're doing something illegal), and then sending to DNM...all for around 4-6% in fees and a false sense of anonymity.
alternatively, you buy a laptop/tablet/smartphone exclusively for procuring BTC. set up LBC account with fake info (I don't even remember what they ask for, its been years since I made a new account). most cash by mail sellers charge around 5-8% in fees. I don't fuck with anyone who doesn't have 100% feedback and a couple thousand trades. box (yes BOX, not envelope) your shit up with some decent-ish stealth (probably unnecessary, but I MBB my cash...worried about water damage). either pay for postage at post office or online using gift card. I generally use my neighbor's address with my name as return address, that way if shit goes wrong I could potentially get it back (hint: never had an issue, LBC cash by mail sellers have obvious reasons to be on-point with their address). mailing cash isn't illegal. if it's over $10,000 the IRS will have some questions though, no doubt. but use whatever return address you want. once you get the coin, deposit coin into wallet created on the same device you use LBC with, and then DNM. no need for a tumbler. completely anonymous. about 5-8% in fees + cost of shipping.

For libertyx, all you need to enter in is an email, valid name, and address that matches the name. Now whether you want to use a name/address that is different from your own is totally up to you. Its just used to verify you exist.
And when you go to the kiosk, literally the only thing you need to bring is the cash. I have no idea why more people don't use this.

CashToCrypto, but only because I don't have libertyx

I use a Bitcoin ATM located in a shopping mall in my city. I believe it's an Instacoin ATM. Doesn't require you to either take a picture or scan your hand. Simply scan your QR Code and start slipping in bills.
However, ATM exchange rates are like 50$ higher than normal market price, so you end up paying a little more extra. But fuck, best OPSEC choice ever!

LibertyX treats me nicley. They even hooked me up with $5 extra bit coin my first time because I went to a location that hadn't been used before.
Why would you care about giving a site personal information? Buying BTC is just as legal as exchanging USD and Euros. All you need to do is give your coins a tumble or bounce them between electrum wallets and you're fine.
