Whats the size? If its a 5footer its gotta be upright and straped to a vertical pillar according to the DOT.
My car broke down on the interstate with 3 five footers in the back, the highway patrol cop that showed up said if i couldn't get my car off the highway in less then an hour he was calling a tow truck and ticketing me for illegally transporting pressurized cylinders.

I was going to reply "Anything is possible, although probably not the best idea!"
But yes nitrous is legal and you will have no problem with this. Nitrous is used is a lot of different things - Chemistry, Dental, Food and Agriculture, ETC. No different then a tank of O2, Argon, Propane, or HCl - Except it's awesome!

Pay attention to the speed limit and don't drive like a dumbass, then the cop has no reason to pull you over. If you're paranoid, pull into a gas station or store and act like you're going about regular business and buying food for the ride out
Gas cylinders are color coded by type. Paint the cylinder a color that matches oxygen, nitrogen, or CO2 and it'll look like it's for welding. Throw a torch or at least some beat up leather gloves and tools in the trunk with it for camo.
MORE IMPORTANTLY: Check your car over for working lights and up to date registration/insurance/valid license and don't drive like an ass. I've heard more stories of idiots driving around with federal amounts of drugs with broken tail lights...
