Is there anyway that anyone knows of that you can permanently delete messages from your phone? I am more curious than anything, I do not have a need to (and hopefully never do). Lets assume both iPhone and Android/

The short answer is no. LE will always be able to retrieve them.

If you want all traces of messages removed from phone then the best way, on android, is to encrypt it and then factory reset.

Telco's store text message metadata (timestamp, sender, receiver, etc) permanently. It's not going anywhere.
The content of messages is removed from telco's systems when the receiver gets the message. If the receiver's phone is off or otherwise prevented from receiving the message instantly, the telco will hang on to the message for 48-72 hours (depending on the carrier and other factors) while trying to resend it. After that period, it's cleared from their database, whether or not it was received by the other party.
LE can certainly get metadata with a warrant. The telco's don't delete that. They can get the message data from the telco's with a warrant if it's stuck in "limbo" or if they just simply tap it and get it in real-time, or they can just use a stingray and skip the warrant. Not much historical data here.
However, it's likely agencies like the NSA scoop up this data from the telco's systems and store it all together anyways for historical use, etc, but they're not gonna share that shit with your local PD, so if you're not an NSA target that probably doesn't mean that much.
Use a burner and wipe the messages yourself periodically, most devices have an option to delete all messages at once or to simply master reset the device. Both options are sufficient. There's no data on the device for them to read, only metadata to get from the telco (which shouldn't be much if you rotate burners and never use your personal info for them). So unless you're a dumbass who doesn't passcode protect their device, uses blatant drug language in the messages that never get deleted from said device.....

contrary to what most people think, I'm not convinced that cell phone companies actually log the contents of SMS messages, and if they do, it's not for more than a few days. I know they keep records of messages (as in, this number messaged this number at this time/date), no idea how long those records are saved for though. if you delete the messages off both machines, maybe factory reset them, I htink you'd be safe.
that being said if LE is already watching you, they're most definitely receiving, reading and saving your texts. in this case deleting wouldn't do much
You can permanently delete them on your phone by erasing them. The problem is that phone companies record the messages like forever and stuff
