What can your ISP see when you broadcast a bitcoin transaction?

If I broadcast a bitcoin transaction from my iphone using a btc application,

What can LE/my ISP see about me?

Will they just see that I'm sending encrypted information to the bitcoin network, or do they get to see more, such as my payment details or my sending/recipient addresses and amount of btc sent?

Nothing if you're doing it through TOR like you should be.

Then they could only see that you used their network to connect to the TOR network, not that you submitted a transaction to the bitcoin network once you were on TOR.
