This is a pretty important question. I am getting into vending soon. I have been planning and setting everything up over the past 2 months. I want my plan to be flawless. I need OPSEC tips on not getting myself DOXed by competition or what have you.
As a vendor, how do I prevent myself from getting DOXed?

This should be obvious. Don't give anybody your name and address, and don't be a scammer.
The only way you can be doxxed by fellow vendors is if you buy drugs off them. But if you are a legit vendor, why would you BUY drugs on the darknet?
A vendor brings drugs IN to the marketplace. He doesn't just move them around inside. If you buy your stock from other vendors, 10 times out of 10, you will scam.
Vendor accounts are never allowed to purchase anything for this reason, but some vendors have many ordinary accounts they use to buy their own product to pad their feedback, buy stock from their competitors to re-sell at a loss, and occasionally these are sacrificed as "suicide shills" to give poor feedback to competitors.
(there is one town in the UK where ALL darknet problems arise. I specifically ban all sales to it, with the exception of one customer who I will only deal with off-market. Even this customer is banned since yesterday. Hank_vendor doesn't take this precaution, and is now paying the price).
Most scammers have one buyer account that they are particularly attached to, with a history going back before they were a scammer. They are always nervous buying from me, because I can always spot a wrong 'un, so they use their best account to tell me their name and address.
I have the doxx of all UK meth scammers, because they voluntarily give their details to me and scream "I'm a psycho, not a meth customer". Or whisper it. Or don't say anything. Or say too much. Or they just give bad feedback without asking for a refund or reship. A quick message to them usually results in a confused diatribe of hate, all in caps lock, with threats to destroy me and unfavorable comparisons to some low-rent competitor that no meth customer in their right mind could love.
Bingo! Next, I work out who else they've been buying their 84% MDMA from, and their lemon haze, by changing their rating up and down between o and 5, and watching it change next to their reviews of other vendors. Then I warn the vendors, giving them the first part of the customer's postcode. Finally, I whistle, point to it, and support drag the customer away and a competitor's account gets frozen if the feedback remains. If it's removed, I let the scammer stay in business. Its better to have them where I can keep an eye on them and study them, because they will be back year after year.
So, to summarize:- Don't do that shit, and you won't get doxxed. Still want to be a vendor? Because you can never purchase from a DNM again. Not even a bit of weed for personal use. You are about to retire as a buyer until you retire as a vendor.

You'd have to actively try or be completely ignorant in order for that to happen, and if you've been planning for 2 months, I hope to god you have passed that hurdle.
In order to get "doxxed" one of a few things needs to happen:
You willingly hand over your information to someone who then later finds out it is yours and thinks "fuck this guy", or he knew the whole time and then relations sour and he thinks "you know what, fuck this guy". You want to avoid having the only thing preventing your doxx being the line "fuck this guy" going through someone's head, to sum this one up.
You are digitally pwned via anything that reveals a true IP address connected to your identity, which includes but is not limited to: XSS and similar resource or server-swap exploits, a fundamental bug in one or more protocols or programs you happen to be using, using an unmodified cellphone to conduct any sort of related business or discussion, somehow saying enough wrong things to create a link to yourself individually, yadda yadda. You get it. This probably won't happen if you aren't mentally impaired, and you do not piss off the wrong people or organizations. Also if you try to run a .onion shop or market without a clue what you're doing, may also have such an effect.
Your physical shipping is sloppy as a result of fucking up getting postage, packaging materials, return addresses, or quite a few others.
So just don't do any of that. Don't order stuff from competitors, or if you absolutely must, do it in a competent way that will never come back to bite you, don't ship internationally if you don't know what you're doing, and yeah.
Most vendors are technologically impaired so really you only likely need to worry about points 1. and 3.

If you need to ask, you shouldn't be vending.

It's really simple, don't tell anyone and have an excuse for everything.
Don't buy anything off the markets using your vendor account.
