Yes you could do that. It's in fact the best way known nowadays to obtain bitcoins at the end that are not tracable to the bitcoins you start with.
BUT there is one thing you can still improve: if you use the same service to convert in both directions (in your example shapeshift), they can correlate the amounts converted both ways (say within the same hours or day) and possibly assume it's you. So if you really want to make it perfect, you should use a different service for each direction - so they would need to collude together to correlate the time/amount. Other services that can help you doing this are poloniex (email only registration) and xmr.to. On top of that you can also split the amounts. This sounds paranoid, and it is, there is no better way to tumble bitcoins known to man today!
