It happens, but unless the vendor makes an error its actually somewhat easy to ship securely and avoid profiling.

They do.
Often large vendors are arrested and part of their plea arrangement is that LE will operate their account and catch largely buyers. See Xanax King for example. They continued operating his account and caught quite a few of his larger customers who were reselling.
For a new vendor it takes time and money and work and actual product to build a reputation to get buyers "worth" catching. Small fish don't have an automatic "pass" for being small, but it's not anywhere as common to go after a small buyer as it is something buying tens of thousands of pills. It's really a balance of if its worth putting the case together since in most regions they have to prove the person addressed is the buyer. People use drops or fake names, and so on.
It is legal (in the USA at least) for the police to run a sting in which they sell actual drugs to actual buyers in order to catch them. And it is in NO WAY entrapment.
But on the grand scale they're more interested in closing markets and getting large vendors. Read how they took markets down like SR, or read about Operation Onymous.
What you envision certainly can happen; it just isn't the most common thing ever. You should always assume with any order you make that the worst case scenario could happen such as LE has control of the vendor account or is otherwise compromised/profiled/cooperating as part of a plea deal.
It's relatively safe to order from markets. It's just not completely safe. Our goal is to provide as much information as possible to ensure people's safety and teach them to employ proper opsec, but at the end of the day, every order comes with a side of risk of every crime that you're committing by ordering, from simple possession to engaging in the forwarding of a criminal enterprise.
