Would anybody use a darknet bitcoin payment/escrow service that is separate from the market. I am thinking of a cross-market service like PayPal or bitpay for the darknet that tumbles and holds your coins in escrow to prevent exit scamming from markets.

I would be even more less inclined to trust a third party that has no recall whatsoever with my Bitcoin . What would stop you exit scamming ?

2 of 3 multisig already solves this issue. Tools are even available to check if the multisig escrow address is real 2 of 3 before you deposit.

As others have pointed out, you could exit scam. The only way I could see this working is if it were an open source DAO but even then I doubt people would use it as it add another layer of complexity.

No doubt it would be an extremely effective service at preventing market exit scams, mainly because for a market to scam you, your money has to actually get to the market.
