Title: tcpdump to get passwords via Tor exit node?

Can tcpdump be used to get my plain text passwords and login details from an exit node when I use Tor?

If yes, how do I protect against that attack?

Yes.
HTTPS can protect you against this, even if it's not perfect (MITM attacks for example).
