I'm running AirVPN over TOR for hopefully an added layer of protection. I'm not a computer expert though, so does this really do anything? It's not an expensive service (most VPN's aren't it seems) so it looks to be worth it in my opinion. Am I really safer using a VPN along with TOR?

If it was any random VPN I wouldn't be so trusting. Hidemyass VPN was in the news awhile ago because they kept data and turned it over to the feds I think.
AirVPN keeps no records so even if they were subpeona'd, they wouldn't have anything to give.
It's not so much to keep my TOR membership hidden as it is used to block my ISP from monitoring my traffic. Like if I'm downloading a bunch of fresh torrents, there's a good chance your ISP will catch that if you aren't using some kind of protection.
I was really just wondering if it adds an additional layer of protection when on the SR.

True. You can never be too careful though. ISP's are all up in your business these days, monitoring everything. And nothing is infallible.
Even if it's unnecessary, I like the peace of mind.

So where would having TOR proxied through an SSH SOCKS proxy fall on the scale of security?

At the end of the day you are fucked if your entry and exit traffic can be monitored.
