I'm relooking at my security and am wondering if there is any difference in security level between the following:
1.) Mac OS (normal viewing) and Windows 7 on a partition encrypted by Truecrypt
2.) Mac OS (normal viewing) and Ubuntu on a partition encrypted by DM-Crypt/LUKS
3.) MAC OS and using Linux Liberte from a USB
Can someone please shed some light on this, especially whether Win 7 is a safe OS to use. I like and trust True crypt full disk encryption but its only available on Windows and not Linux.
I like the idea of having a seperate OS for SR and keeping it encrypted. I'm prettu good with Mac/Win but have zero experience of Ubuntu/Linux and wonder whether I'll struggle to get the DM_Crypt properly set up and configured to give me encryption of the partition.
Is Mac OS able to dual boot and have an encrypted partition containing Windows 7 even?
Any pointers would be greatly appreciated.

Yes it is possible, personally I would recommend Mac OSX and Windows 7 you could even install truecrypt on Mac OSX then inside Mac OSX have the virtual machine or whatever your using with a vhd, with windows 7 on it and TrueCrypt installed on that.
