Title: need help backing up files to usb, wiping hd clean and restoring files (on mac)

hello guys,
as the title says, i am looking to wipe my hd on my mac clean and start fresh. i have a lot of personal data that i would like to keep, my main concern is deleting some programs that i do not want to be tied back to as well as permanently erasing things i have deleted. i found a guide to do this at the following link: http://support.apple.com/kb/ht1553

step 1: copy hd to usb
step 2: wipe out hd
step 3: re-install hd data from usb

will this accomplish my goal of deleting all data that i no longer want on my computer or will this essentially get me back to square 1 as all the information that i want to delete would also be stored on the hd when i copy it to a usb?

can someone help to guide me thru how to remove only the data i want to a usb so when i wipe my hd and restore it, all the sensitive data i no longer want is gone?
