Title: Do you have to sign for "international mail?"

I'm about to purchase from a vender in the UK. His method of shipping is international mail. Is a signature required?

It depends on shipping method and wether vendor paid the extra amount to have a signature request. Most vendors don't for the safety of both party but if there worried about being scammed some might. Best thing you can do is message the vendor and ask I'd he uses that option

It's up to the vendor to decide if a signature will be required or not.  Certain shipping methods require a signature more than others.

"Airmail" from the UK First Class International for me has always just showed up in my mailbox. I'm sure there is a sign option, but that's likely for Express.

If you are using a USPS po box they usually leave you a slip wanting you to sign for all international mail, if its a private mailbox the person at the counter signs it for you, if its to your residence, you'll get a slip if you are not home at the time of delivery.
