If I use priority shipping and am given a tracking number that confirms delivery, could it be used as a defense against a customer saying they never got the package?

Yes, sounds like your trying to not pay for a package ::).

There's nothing to stop a vendor sending an empty envelope with a tracking number. I'd say that a tracking number proves nothing.

I am not trying to screw anyone over at all. I only ask because the first order I got was for (5x) $1000.
And from what I understand if there is a dispute, that the money is split 50/50. Seems like an easy way for someone to receive the money and get half their bitcoins back.

It's not illegal to buy and sell bitcoins so why not just get the person to sign for delivery?

Not saying you are mate.
Just saying that tracking numbers don't really prove anything.
